Chickpea Salad Sandwiches

There are some good vegan cold cuts out there, but I suppose some of the same questions with standard cold cuts apply - what actually goes in them? The answer is probably better on the vegan side, but isn't it nice to make things from scratch? So here's a lunch favorite:

Recipe

  • Mash up a can of chickpeas with 2 tbsp veganaise & 1 tbsp hot sauce
  • Mix in grated carrot, finely chopped red onion or celery, or any other veggies you have on hand
  • Put it on a sandwich with more hot sauce, cheese, extra greens, avocado, sundried tomatoes, or anything else!

Notes

I like to do 2 cans of chickpeas to feel set for sandwiches for a week or two! There aren't a lot of specifics on how much veggie to add in, so use your judgment, but just don't overdo red onion...

Kung Pao Chickpeas

Always good to add to the collection of crockpot meals! This sounded like a good one, despite the questionable "detox" claims...

Recipe

1/2 red onion, chopped
1 red bell peppers, chopped
2 cans of chickpeas, drained & rinsed
1/4 c soy sauce
2 tbsp maple syrup
1/2 tsp garlic powder
1/2 tsp ground ginger
1 tsp red pepper flakes
1 tsp sesame oil

green onions, sesame seeds, rice

Whisk together the sauce ingredients, and pour over the onion, pepper & chickpeas in the crockpot. Cook 3 hours on high or 6 on low. Keep an eye on it, and add a couple tbsps of water if it looks like it's drying out. Easy enough!

Notes

Standard crockpot stuff - pretty easy, and really good! I'd recommend scaling this up - even with rice and maybe other veggies, one person could easily scarf down a can of these chickpeas ;)

Buffalo Chickpea Taquitos

Vegan comfort food yeah!  From here...

Recipe

1 onion, chopped
2 cloves of garlic, minced
1 bell pepper, chopped
1 can chickpeas, drained & rinsed
1/2 c tomato sauce
3+ tbsp hot sauce
2 tbsp milk
1 tbsp balsamic vinegar
1 tsp onion powder
3/4 tsp coconut / brown sugar
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp ground cumin
chili powder to taste
~10 flour tortillas

  • Preheat oven to 400.
  • Mash the chickpeas.
  • Heat some oil over medium, and saute the onion and bell pepper 3 minutes, then add the garlic and spices for another minute.
  • Add sauces and chickpeas to the pan, bring to a boil, and simmer a couple minutes, adding chili powder for more spice if needed.
  • Scoop about 2 tbsp of filling into each tortilla, roll up, and put close together on a baking sheet.  Brush with oil for extra crispiness.
  • Cook 15-20 minutes until crispy.
  • Serve with vegan cheese sauce if you've got it!

Notes

Not super easy and not quite as good as chicken :/ but overall a fun one!

Meatless Mushroom & Chickpea Pasta Sauce

Alright, here's another faux-meat sauce, this one courtesy of the America's Test Kitchen IG:

Recipe

10 oz cremini mushrooms*
6 tbsp extra virgin olive oil
1 onion, chopped
5 garlic cloves, minced*
1 1/4 tsp dried oregano
1/4 tsp red pepper flakes*
1/4 c tomato paste
28 oz can crushed tomatoes
2 c vegetable broth
15 oz chickpeas, rinsed
2 tbsp fresh basil, chopped
*feel free to add more as desired!
  • Pulse mushrooms in a food processor until in little (1/8-1/4 in) pieces.  Heat 5 tbsp of oil in a dutch oven over medium high and cook mushrooms (and a little salt) until browned.
  • In the meantime, pulse the onion similarly (don't need to clean out the processor between all these ingredients).  Add to the dutch oven until soft.
  • Mix the extra tbsp of oil plus the garlic, oregano, and red pepper in a bowl.
  • Add the tomato paste to the pot and cook a minute or 2.  Reduce heat to medium and clear space in the middle for the garlic mixture; add it and cook and mix in until fragrant.
  • Add the tomatoes and bring to a simmer about 5 minutes.
  • Pulse the chickpeas similarly, and rinse in a strainer until the water runs through clear.  Add to the pot and simmer about 15 minutes.
  • Stir in basil and salt & pepper, and serve over pasta!
Notes

This is a bit more complicated, but comes out really, really good!  Great to make a big batch and get a few meals out of it.  Might even be jefe-friendly?

Buddha Bowls

This looked like a worthwhile vegetarian recipe to try!  Why Buddha?  Supposedly it's a heaping, bulging bowl that fills you up, also no animals were harmed in the making of the meal...

Recipe

Veggies
1 sweet potato, halved (or pre-chopped, not sure why not...)
1/2 red onion, sliced
1 bundle broccolini, stemmed and chopped
1-2 handfuls kale, chopped

Chickpeas
1 can chickpeas, drained, rinsed & patted dry
1 tsp cumin
3/4 tsp chili powder
3/4 tsp garlic powder
Optional: oregano, turmeric

Sauce
1/4 c tahini
1 tbsp maple syrup
juice of 1/2 lemon

Start roasting your sweets (skin side down) and onions at 400 degrees, drizzled with olive oil and salt and pepper.  After 10 minutes, flip your sweets and add the broccolini, drizzling again...  After another 10, add the kale and drizzle again...  Bake 5 more minutes until ready to go!

Meanwhile, toss the chickpeas with the seasonings and saute in some oil, turning up the heat to brown as needed.  Also mix together the sauce, adding hot water to make it thinner and easier to spread.  Combine and eat!

Notes

Lots of great ingredients in there!  If anything, I over-drizzled and that kind of took over.  It's easy enough to do and adjust as your ingredients dictate, just keep an eye on the roast timing!

Crispy Baked Chickpeas etc.

This post aggregates a few concepts I like, but didn't feel were really substantial enough for their own posts:

Crispy Baked Chickpeas

Drain and rinse a can or two of chickpeas.  Cover in vinegar, bring to a boil, remove from heat and let sit for 20-30 minutes.  Drain, toss with olive oil and some seasonings, and bake about 45 minutes at 400 degrees.  (Original link)

This was the kicker to get me to put this post together.  I'd done baked chickpeas a few ways before; they were good but simple enough I didn't need to save the instructions or publicize it.  Trying to use up the bounty of homegrown apples, though, I sliced up a few (to go with the apple cider vinegar).  The sweet element really added to the flavor (especially since the vinegar can be overpowering).


Eggs Baked in Avocado

Halve your avocados, remove the pit, and scoop out some more space for an egg.  Season with salt, pepper, lime juice, etc.  Crack an egg into each half, and hey, season some more (chili powder, jalapeno, etc.).  Bake at 450 degrees about 10-12 minutes, until the egg white is appropriately set.  (Original link)

Another simple concept.  It's too bad, but you really have to scoop out some extra avocado pulp to make room for the egg.  I did not, so my first ones were a little messy...  Second time around, I made plenty of space for the egg, but neglected the stability factor and lost some of the egg the totally predictable rolling of the avocado halves :(  Still plenty of goodness left, and at least more photogenic:


Marinated Zucchini

Halve some small zucchini lengthwise (or quarter bigger ones).  Heat some olive oil in a skillet, and brown the zucchini a couple minutes on each side.  Whisk together three tbsps olive oil, one tbsp vinegar, and seasonings like garlic, salt & pepper, etc.  Toss with zucchini in a flat container and let marinate at least an hour.  (Original link)

Simple again - see the theme?  Also flexible, since you have plenty of room to add seasonings, apples, etc.  The vinaigrette ratio was also helpful for future reference!

Chicken & Chickpea Stew

Hmm, not much to preface this with.  Original recipe here.

Recipe

2 tbsp olive oil
1 tbsp butter
1 lb thin chicken breast, cut into 1/2" pieces
4 carrots, peeled and cut into 1/2" pieces
2 garlic cloves, minced
1 tsp ground ginger
1 tsp smoked paprika
2 tbsp tomato paste
2 tbsp red wine (apple cider) vinegar
1/2 c water
1 15-oz can chickpeas, drained and rinsed
1 cup spinach
instant grits
more butter, salt & pepper

Heat the olive oil and butter over medium-high, then add the chicken, carrots, garlic, ginger, paprika and a sprinkle of salt and pepper.  Saute for about 15 minutes, then stir in the tomato paste, then vinegar, water, chickpeas and spinach.  Cook about 5 minutes.  Meanwhile, prepare the instant grits, and top with the stew.

Notes

This recipe uses some good ingredients without a whole lot of work...  The instant grits help - and don't laugh, they're actually pretty solid!  Gotta say, though, as delicious as the chicken smelled with my generous servings of garlic, ginger, paprika, and all, some of those flavors seemed to disappear in the finished product.  Maybe it had to do with, I carefully halved most of the main ingredients in the recipe, but when it came time to add the chickpeas, I had a brain fart and dumped in the whole can.  Thus that iteration was a bit dominated by that component.  Still good, though:
